Homemade Burgers & Sweet Potato Wedges

Method
To begin, preheat the oven to 200ºC fan/220ºC/gas 7.
Peel and wash the sweet potatoes, then cut them into wedges. Place onto an oven tray, drizzle with olive oil and season with salt, pepper and 1 tsp Cajun seasoning. Mix everything together and spread evenly across the tray. Place into the preheated oven for 25 minutes.
Meanwhile, chargrill the buns on a griddle pan over medium heat to your liking and set aside for later. Now peel and cut the onion into slices. Then trim, wash and finely chop the spring onions.
In a mixing bowl, use your hands to mix together the beef mince, salt, pepper and a splash of red wine vinegar. Divide into 4 and shape into burger patties.
With 10 minutes to go until the sweet potato wedges are cooked, add the burgers and onion to the large pre-heated griddle pan on medium heat. After 5 minutes, flip the burgers. Add the bacon medallions to the pan, turning after a couple of minutes.
Cut the tomato into slices and add a slice to the base of each bun. Once the burgers are cooked, place them on the buns. Top with the bacon medallions and onions. Serve the sweet potato wedges between four plates, sprinkle over the chopped spring onion and add the burgers.
