Sesame Salmon & Sweet Potato Mash

200g tenderstem broccoli
2 garlic cloves
1 inch piece fresh ginger
600g sweet potatoes

4 skinless salmon fillet

Method
Preheat the oven to 200C/180C fan/gas 6, and prepare a large saucepan of boiling salted water.
Peel and chop the sweet potato into chunks and add to the pan of boiling water for 15 minutes.
To create the marinade, mix together the 2 tbsp of soy source, grated ginger, crushed garlic, 2 tbsp of honey and 1 tbsp of sesame oil in a mixing bowl. Place the salmon and broccoli on a baking tray. Season with salt, pepper and spoon over the marinade you just created. Cook in the oven at 200C/180 fan/gas 6 for 15 minutes.
Once the sweet potatoes have softened, mash together with the juice from the lime juice, catching any pips and a dash of sesame oil.
Serve on four plates, the mashed sweet potato, broccoli and marinated salmon altogether.
