1 red onion

2 mixed-colour peppers

4 skinless chicken breasts

150g fresh guacamole

200g fresh tomato salsa

4 tsp fajita spice mix

8 wholemeal tortillas

Method

Slice the red onion into strips. Then deseed the peppers and slice them into strips. Set both aside.


Cut the skinless chicken breasts into 1.5 cm strips. Heat a drizzle of olive oil in a pan over medium-high heat, add the chicken strips and stir regularly for 5 minutes.


Add the sliced peppers and onion to the pan. Sprinkle with 4 tsp of fajita spice mix, stir thoroughly and cook with the chicken for a further 5 minutes.


Warm the tortillas according to the packet instructions.


To serve, build your wraps by adding a spoonful each of fresh guacamole and tomato salsa, topped with a helping of the chicken and vegetables. Fold the tortilla from the sides and bottom to complete your fajita.
