Hoisin Crispy Duck Parcels

400g duck breast (skin on)

200g medium egg noodles

1 tsp Chinese five-spice
2 tbsp hoisin sauce
4 tbsp sweet chilli sauce

Method
To begin, cut the lettuces in half, remove the stalks and then separate the leaves. Evenly distribute these lettuce cups across two plates. Trim and finely slice the spring onions, and set them aside for later. Cut the duck into 2 cm cubes and season with salt, pepper and 1 tsp Chinese five-spice.
Place the noodles into a pan and cover them with boiling water. Place the lid on and simmer for 3 minutes. Heat a drizzle of olive oil in a pan and add the diced duck, tossing regularly.
Then, drain the noodles and drizzle with sesame oil. Evenly distribute the noodles over the lettuce cups.
Once the duck is golden, drain the fat. Then mix together the 2 tbsp hoisin sauce, spring onions and crush in the garlic cloves. Add to the duck and toss until well coated. After a few minutes, distribute portions between the lettuce cups along with small dollops of sweet chilli sauce. Finish by scattering over the coriander leaves.
