1 head broccoli

3 garlic cloves

400g shiitake mushrooms

1 red onion

100g cashew nuts


Dried Goods

200g medium egg noodles

1 tsp chilli flakes

2 tbsp hoisin sauce

1 veg stock cube

Method

Begin by separating the broccoli florets, halving any large pieces. Chop the mushrooms, peel and finely slice the red onion and garlic.


Next, boil water in a pan, add the stock cube and stir until dissolved. Then add the noodles and cook according to the packet instructions. Add the broccoli for the final 4 minutes.


Meanwhile, heat a drizzle of sesame oil in a large frying pan on medium-high heat. Add the red onion and mushrooms and cook for a couple of minutes. Then add the garlic, 100g cashew nuts and chilli flakes, stir and cook for a couple more minutes.


Drain the noodles and broccoli using a colander, reserve a mug of water from the saucepan. Add the noodles, broccoli and 2 tbsp of hoisin source to the frying pan, stir and cook for a further minute. Use the reserved water to loosen if needed.


Add a drizzle of sesame oil over the pan before serving in four bowls.
