Sizzling Beef Steak Noodles

80g beansprouts
2 garlic cloves
1 inch piece fresh ginger
300g oyster mushrooms
2 spring onions
1 bunch fresh coriander

Method
Begin by preparing a large saucepan of boiling salted water.
Then peel the ginger and garlic cloves and trim the spring onions. Place them into a food processor along with half the coriander, and pulse until finely chopped. Set aside for later.
Remove and discard the fat from the sirloins, then rub with salt, pepper and Chinese five-spice. Heat a drizzle of sesame oil in a frying pan over high heat. Add the steaks and cook to your liking. 3 mins for rare, 4-5 mins for medium and 7-8 mins for well done. Turn the steak over every minute until cooked. Then remove from the pan and place them onto a chopping board to rest.
Add the noodles to the pan of boiling water for 5 minutes or until cooked.
Meanwhile, heat a drizzle of sesame oil in the frying pan used earlier on high heat, add the mushrooms and mixture from the food processor. Add a pinch of salt and pepper, then toss for a minute before adding the beansprouts. Continue to stir regularly.
Once cooked and ready, use tongs to transfer the noodles straight to the frying pan. Toss well to mix, then add the hoisin sauce and the rest of the coriander leaves, giving everything another mix.
Divide the finished stir fry between 4 bowls. Cut the steak into 1cm slices and place on top of the noodles.
